Jumbo Spiced Pumpkin Bread

  • 400 grams sugar
  • 180 grams vegetable oil
  • 3 eggs
  • 400 grams Kent pumpkin, Steamed pumpkin cubes. Cooked in advance and cooled
  • 450 grams plain flour
  • 1 level tsp ground cloves
  • 1 level tsp ground cinnamon
  • 1 level tsp ground nutmeg
  • 1 level tsp bicarbonate of soda
  • 1/2 level tsp baking powder
  • 1/2 level tsp salt
  • walnuts to decorate if desired

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Jumbo Spiced Pumpkin Bread
  1. Preheat fan forced oven to 180 degrees
    Grease 1 x large loaf pan (9 x 5 x 3")

    Add 400g sugar with 180g vegetable oil to Closed lid and mix 20sec, sp 4, mc on.
    Add 3 eggs to Closed lid and 400g of cooled pumpkin cubes/puree (steamed in advance) and mix 20 sec, sp 4, mc on.
    Add 450g flour, 1 tsp ground cloves, 1 tsp ground cinnamon, 1 tsp ground nutmeg, 1 tsp bicarbonate soda, 1/2 tsp baking powder and 1/2 tsp of salt to Closed lid and mix 30 sec, reverse, sp 4.5.
    (Stop mix half way and use spatula to scape down sides of bowl)

    Pour mixture into prepared tin.
    Decorate with walnuts on top if desired.

    Bake for 1 1/2 hours checking along the way.
    (I like to cover mine with alluminium foil half way through the cooking to prevent any burning).Test with skewer and when skewer is clean, remove pumpkin bread from oven and leave in tin for 10 minutes before allowing to cool on rack.
