LCHF NO BAKE JAFFA CHEESECAKES

BASE

  • 55 grams Butter
  • 150 grams almond meal
  • 45 grams cacao powder, raw
  • 1/4 tsp stevia extract powder

CHEESECAKE

  • 500 grams Boiling water
  • 3 tsp Gelatine powder
  • 2 tbsp dried blitzed orange peel
  • 30 drops wild orange oil, Doterra brand
  • 1/4 tsp stevia extract powder
  • 500 grams cream cheese, full fat

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    BASE
  1. Put butter inClosed lid heat 90 seconds, 50 °C, speed 1.
    Add almond meal, cacao and stevia 15 seconds, speed 3.
    press tsps of mixture into 2x 24 mini muffin trays put in fridge to chill till filling made. Make sure mixture is pressed in hard or base will crumble.
  2. CHEESECAKE FILLING
  3. Pour 500g boiling water into Closed lid add 3 tspns gelatine, 2 tblspns ground dried orange zest and 30 drops wild orange oil mix for 45 seconds, speed 3. Scrape down sides make sure gelatine has dissolved. Add cream cheese cut into chunks mix for 30 seconds speed 3 scrape down sides and do longer if cheese not all mixed in.
    Pour onto cheesecake bases leaving room for melted chocolate,
    chill in fridge for 1 hour.
  4. CHOCOLATE TOP
  5. Put 200g chocolate into Closed lid chop for 10 seconds, speed 8 then melt for 90 seconds, 50 °C, speed 2, pour onto cheescakes

Tip

if you have left over cheescake filling these can be put into silicone moulds and dipped in chocolate then frozen for a little tasty treat

    michelleyandle: Hi Michelle you can replace the gelatine, orange zest and oil with 2 packets of orange sugar free jellies and then you would go straight to the 45 seconds on speed 3 to mix this. cheers Janis
