Lemon Blueberry Coconut Cupcakes

Cupcakes

  • 80g raw sugar
  • zest of 1 lemon
  • 125g softened butter
  • 2 large eggs
  • 130g cups S R flour
  • 60g dessicated coconut
  • 110g natural greek yoghurt
  • 1 cup of frozen blueberries

Recipe's preparation

  2. Put sugar and lemon zest in TM bowl and mill for 10 secs on speed 9, to get lemon icing sugar.

    Add the butterfly and add butter.

    Beat on speed 4 for 10-15 secs until light and fluffy.

    With the butterfly on speed 4 add one egg at a time. Then add flour, yoghurt and coconut one at a time. Beat for 5 secs after each addition.


    Spoon mixture into cupcake cases and press frozen blueberries into each cupcake, then bake for 20 mins.


    Makes 12 cupcakes

    Recipe worked just as nice!
