  • 140g desiccated coconut
  • 40g white chia seeds
  • 20ml lemon juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add biscuits to a clean and dry Thermomix bowl and mix 10 sec/speed 9.

    2. Add remaining ingredients to the bowl and mix for 20 sec/speed 7, or until well combined.

    3. Use a teaspoon to measure quantity and use hands to shape each ball and roll in extra coconut.

    4. Refrigerate for at least 30 minutes until cold.

Tip

After step 2, I like to transfer mixture to a bowl and form balls from there. This allows me to soak my Thermomix bowl for easier cleaning later.

Great for serving at parties and as a snack for school lunches!
