Lemon Cupcakes with Young Living Essential Oils
Cupcake
- 300 grams SR flour
- 150 grams caster suagr
- 75 grams Butter, Room Temperature
- 230 grams Milk
- 2 eggs, Room Temperature
- 1 zest of lemon
- 5 drops YL Lemon Essential Oil
Icing
- 1/3 cup lemon juice
- 1/4 cup sugar
- 1 drop YL Lemon Essential Oil

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat Oven to 200 Degrees Celcius.
Grease and line small cupcake tins (small patty pans fit great!). - Add all 'cake' ingredients into the bowl - mix 20 seconds, speed 5.
Scrape down sides and repeat if neccessary.
Spoon into patty cake cases.
Bake for 10-15 min until they bounce back at light touch. - As soon as the cakes come out of the oven brush the top with the icing mixture.
