Lemon Curd Bliss Balls

  • 200 grams plain biscuits, Like Marie (Add 200g of cashews instead for protein boost)
  • 100 grams dessicated coconut, Plus extra for rolling
  • 50 grams rolled oats
  • 80 grams Lemon curd, I make Cookidoo one
  • 2 tbsp Maple syrup
  • 1 tbsp lemon juice, Optional

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Blitz all together 30 sec/speed 9 (May need a little more if using cashews but you decide).

    Make into small balls and roll in extra coconut.

    Allow to firm in fridge and store in an airtight container for up to 1 week)

Tip

I use biscuits to make them lunchbox friendly but they are awesome with cashews too if you want a little protein boost.

If you like a stronger lemony taste then add the lemon juice otherwise you may find it's enough with just the curd
