  • 290 grams Self Raising Flour
  • 2 eggs
  • 100 grams Butter
  • 140 grams raw sugar
  • 160 grams buttermilk
  • 30 grams Poppyseeds
  • juice of 2 limes
  • rind of 2 limes
  • 45 grams Extra Sugar for topping.

Recipe's preparation

    Muffins
  1. 1: Mill the lime rind and sugar together in the Closed lid10secs/sp9

    remove from the TM bowl and put in a separate bowl for later.

     

    2: Heat butter Varoma/1min/sp1, until just melted.

     

    3: Add eggs & buttermilk and mix sp5 until just combined. DO not overmix.

     

    4: Add dry ingredients, including the sugar/rind. Mix sp5 /3-4sec /sp5

     

    5: Spoon mixture into muffin cases inserted into a 12 hole muffin pan.

     

    6: Bake at 200C for 10-15 minutes until golden brown.

     

    7: While muffins cook, mix the lime juice with the extra sugar, being careful not to dissolve the sugar.

     

    8: As soon as you remove the muffins from the oven, brush the sugar/lime mixture over the tops of the muffins. You can prick the surface of the muffin, to allow the juice to be absorbed into the muffin. Cool on a rack.

     

    9: Enjoy with your favourite cup of tea! Shared of course with friends!

    Lovely flavour. I added extra lime zest only because we like a strong flavour. And reduced the sugar to 95g. Also, I used kefir instead of buttermilk, because I had it! Lovely light texture. Probably would use 25g of poppyseed instead of 30g next time. Recipe made 11 muffins, which didn’t last long in our house!! Thanks for sharing ☕️

    These were yum, i do think i needed bigger limes for just a bit more flavor though, I've put some in the freezer to save for a rainy day

    Fantastic! Made these today for school lunch box.  I didn't have any poppy seeds so used shredded coconut as well.  Worked beautifully.  Have frozen for future lunches! Thanks for sharing this great recipe! Limes are so abundant on our tree at the moment great way to use them!
