Madeira Cake

  • 125 g Milk
  • 125 g caster sugar
  • 125 g Butter, softened
  • 240 g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Recipe's preparation

  1. Preheat oven to 180 degrees.

    Place all ingredients in the Thermomix.

    Place measuring cup in lid.

    Beat for 30 seconds, gradually increase to speed 5 to stop the mixture spitting all over the lid.

    Check if mixed enough and mix for a further 15 seconds, speed 5 if needed.

    Either place the entire mixture in a round cake tin and bake for 30-35 minutes
    OR
    place a heaped dessert spoon full in patty papers and cook for 15 minutes as cupcakes.

    When cooled, ice with icing and decorate as desired. These cakes freeze very well.
