Mandarin, Macadamia and Polenta Cake

  • 4 mandarins, whole
  • 280 g macadamias
  • 250 g Butter, cubed
  • 1 tsp vanilla essence
  • 210 g sugar
  • 3 eggs
  • 170 g polenta
  • --- icing sugar, for sprinkling

Recipe's preparation

    Mandarin, Macadamia and Polenta Cake
  1. Grease and line a 22cm round cake tin.

    Set oven to 150 degrees Celcius.

    Add the water to the TM bowl. Place mandarins into simmering basket and put in TM bowl. Cook for 45 mins at Varoma Temp, speed 3.

    Remove mandarins and clean TM bowl.

    Place nuts into dry TM bowl. Mill for 8-10 secs on speed 7. Set aside.

    Remove seeds from cooled mandarins and put mandarins including skin into the clean TM bowl. Mix for 5-8 secs on speed 5 until pulpy. Set aside.

    Add butter, sugar and vanilla to the clean TM bowl. Mix for 50 secs on speed 4. After the mixture has creamed together, keep the blades running and add the eggs one at a time until incorporated. (approx 30 secs)

    Add polenta, nuts and mandarin pulp. Using the spatula to assist mixing, blend for 15 secs on speed 5.

    Pour mixture into cake tin and bake for about 1 hour at 150 C, until cake is golden and firm to touch. 

    Remove from oven and leave in tin for 15 mins before removing to a plate. Top with sifted icing sugar.

    I always get ooohs and aaahs when I make this cake! So simple to make and it is delicious. Serve with good quality cream and dark chocolate covered mango and goji berries (from the lolly section of the supermarket) for the ultimate indulgence.

  • I too had a lot of butter

    I too had a lot of butter come out the bottom of the spring form tin...but because of a previuos comment made sure I had a drip tray underneath. Smells awesome. tastes amazing. I too will cut down on the butter next time.

    The cake was delicious but butter dripped out into my oven (I used a springform tin) while baking. I would definitely cut the butter by at least 50g next time.

    This cake was incredible! Light, moist, delicate flavour - very elegant which is not a word I would use to describe cake very often.

    I am already making for the 2nd time this week - a winner in my opinion! Cooking 7
