Mocha brownies with a Coffee glaze

Ingredients

Mocha brownies

  • 30 g walnuts
  • 180 g Butter, chopped
  • 30 g brown sugar
  • 180 g sugar
  • 1/4 cup Boiling water
  • 1 level tablespoon instant strong coffee granules, Dissolved in the boiling water and cooled slightly
  • 30 g cocoa powder
  • 3 eggs
  • 1 dash vanilla extract
  • 150 g plain flour

Coffee glaze

  • 1 cup Icing sugar mixture
  • 1 level tsp instant coffee granules, dissolved in 1 tblspn boiling water

Recipe's preparation

    Brownies:
  1. Preheat the oven to 180°C. Grease and line a 20cm square pan, or a small slice pan.

    1. Blitz walnuts on Turbo, once. Leave in the bowl.

    2. Add the butter and sugars and melt 70°C/ 3 mins/ sp3, or until melted.

    3. Add the (cooled) coffee blend, cocoa powder, eggs and vanilla.

    4. Blend sp 3/30 secs.

    5. Add the flour sp4/10 secs, or until just blended.

    6. Pour the mixture into the prepared pan. It will be fairly runny.

    7. Bake for between 20-30 mins, or when you insert a skewer, it still has a few crumbs attached to it.

    8. Cool before icing with the coffee glaze below.

  3. 1. Place icing sugar into a bowl and combine with the dissolved coffee mixture.

    2. Smooth over the top of the cooled brownie.

    Yummo!!! These were delicious! I added a heaped tablespoon of coffee. Took my walnuts out after chopping then put them back in at step 5. did step 5 in reverse, that way my walnuts were still a little chunky.
    One of the best brownie recipes here. Love the glaze too, not too thick. I sprinkled more chopped walnuts on top as soon as the glaze went on.

    Have just made this, so easy, and it is amazing... my coffee probably wasn’t strong enough.. but a good flavour.... great recipe ....will certainly make again
