INGREDIENTS

  • 500 grams S R Flour
  • 250 grams desicated coconut
  • 1 portion Lemon skin peeled for zesting
  • 250 grams brown sugar
  • 200 grams Frozen Blueberries, or fruit of choice in small pieces
  • 500 grams Butter Milk, (refer front of EDC to make up if you have none)

Recipe's preparation

    Egg Free Muffins
  1. Preheat oven to 180 degrees


    Grease a 12 hole muffin tin


    Place Lemon Zest, brown sugar, SR flour and desicated coconut all into the bowl and mill 10 sec/speed 9


    Next add the buttermilk, mix speed 5 / 20 sec


    SET REVERSE SPEED counter-clockwise operation ADD Frozen berries, mix 10-20 sec/Speed 5 until incorporated.


    one machine is stopped, remove lid and just use the spatula if needed to finish off incorporating berries, do not over mix muffin mix


    scoop out muffin mix, should look rustic and fill each muffin tin hole.


     


    cook in oven approx 15 -20 min or until brown
