  • 250 grams Butter
  • 1 cup caster sugar
  • 2 eggs
  • 3 tablespoon Milk
  • 3 1/2 cups P Flour
  • 6 teaspoon baking powder
  • 1 1/2 cups Coconut
  • 1 teaspoon vanilla
  • extra caster sugar for coating

Recipe's preparation

    Method
  1. Pre-heat oven to 170c if using fan or 180c if not. Paper line biscuit trays.

    Insert butterfly. Add butter & sugar to bowl. Mix 30 secs / sp 4. Add beaten eggs, a little at a time, till well combined 30-40 secs / sp 4. Remove butterfly. Add remaining ingredients & mix 30-40 secs / sp 5. Scrape down side & repeat if necessary till combined. Roll into finger shapes, then roll into extra caster sugar. Bake 10-15mts until just begining to brown. Cool on a wire rack.
