Nadias' Gluten Free Banana & Cinnamon Cupcakes

Ingredients

Cupcakes

  • 140 g raw sugar
  • 2 eggs
  • 300 g Gluten free self raising flour
  • 150 g Milk
  • 60 g olive oil
  • 1 teaspoon Vanilla Bean Paste
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground mixed spice
  • 1 Large, Banana or 2 small sliced

Recipe's preparation

  1. Pre heat the oven to 180 degrees

    Line the muffin tray with the paper cases

     

    Add the Raw Sugar to the TM Bowl and mill for 5 Seconds on Speed 10

     

    Add all of the remaining ingredients into the TM Bowl, EXCEPT for the banana. And mix on speed 3 for 15 Seconds. Scrape down the sides of the bowl and knead the mixture for 1 minute | Closed lidDough mode

     

    Add the banana either sliced or chopped into small chunks and evenly roll through the mixture using your spatula

     

     

     

    Pour the mixture into the paper cases and cook in the oven for about 15 mins or until golden on top and cooked through

  • I cut a slice if banana for

    I cut a slice if banana for each and put it on top of the mixture and pushed it down a bit so that the banana was covered with the cake. Oh and I used soy milk to make it dairy free.
