Nanna Rita's Honey Biscuits

Ingredients

100 portion(s)

Mixture

  • 1000 grams honey
  • 400 grams Soft brown sugar
  • 100 grams Butter, EDC page17
  • 150 grams raw sugar
  • 6 --- eggs
  • 2000 grams plain four
  • 4 teaspoons bicarb of soda
  • 1 teaspoon Nutmeg
  • 2 teaspoons mixed spice
  • 1 teaspoon cloves ground
  • 2 teaspoons cinnamon
  • 1 teaspoon salt

Recipe's preparation

    Method
  1.  

    Place sugar into TM bowl and mill 10 sec/speed 9, scrape down sides and put aside

     

    Place honey, soft brown sugar and butter in TM Bowl and cook 5 min/100C/speed 1

     

    Let mixture cool then add eggs and castor sugar and mix 10 sec/speed 4-5

     

    Place flour and spices in a large bowl and mix with a wooden spoon

     

    Pour honey mixture into mixing bowl with flour and stir

     

    Cover and let stand overnight to allow mixture to rise

     

    Either take small spoonsful of mixture and roll into balls then press almond into to top of ball to flatten

    If you want a glazed finish paste tops of biscuits with beaten egg before cooking

     

    Otherwise roll out mixture and cut shapes with cookie cutters and then ice once cooked

     

    Preheat oven to 160C then bake for 12 minutes

    Let biscuits cool on tray for a few seconds then place on paper to cool ready for storage

     

    Makes at least 100 biscuits depending on size.

    We call these the fainting biscuits because my eldest daughter fainted while making them. Very yummy and we still make them all the time!

    i halved the recipe and stillgot oodles of biscuits tmrc_emoticons.) ts is an awesome recipe, though is very sweet. Next time I think I shall leave out the raw sugar and see if it lessens the sweetness a bit.

    These are fantastic and so easy!! I didnt rest them and used a bit of extra flour to roll the balls. Instead of icing I used 100s and 1000s before baking. Just enough sweet and easier to store.
