  • 50 grams coconut oil
  • 10 --- fresh soft dates
  • 250 grams Nut Butter
  • 15 grams ginger, Fresh
  • 80 grams Raw pumpkin seeds or Pepitas
  • 15 grams Puffed rice
  • 45 grams raw almonds
  • 1 pinch sea salt flakes, optional
  • 100 grams dark chocolate, 70%

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Grate Ginger
  1. Speed 7 for 3 seconds. Scrape down bowl.
  2. Mash Dates
  3. Speed 7, 5 seconds. Scrape down bowl.
  4. Melt Oil
  5. 20 Seconds, 37 degreees, Speed 2 (increase time if necessary)
  6. Add Nut butter and combine
  7. Combine for 30 seconds, 50 degrees, speed 3
  8. Add remaining ingredients
  9. Add pepitas, puffed rice, almonds and salt if using. Counter-clockwise operation Combine for 30 seconds, speed 1.5.

    Scoop mixture into a lined baking tray (15 x 20 cm) or Thermomix silicon snack bar moulds and press firmly out to the edges. Place in refridgerator to firm up.
  10. Wipe out bowl
  11. Return bowl to base and add chocolate. Melt chocolate for 2mins, 50 degrees, speed 1 (increasing time as needed) Pour melted chocolate over slice, use spatula to distribute chocolate evenly and return to fridge to set.

Tip

Can be frozen.

Depending on the nut butter used the salt can be omitted from this recipe. I made my nut butter using Quirky Cookings basic nut butter recipe.
