- Zest 1 orange
- sprig of rosemary (leaves only)
- 60 grams rice flour, Every Day Cookbook
- 60 grams sugar
- 120 grams plain flour
- 100 grams Butter
- caster sugar, Rolling outside of dough before baking
Pre-heat oven to 160 degrees.
Mill orange zest & rosemary in mixing bowl, 20 seconds on speed 9.
Place remaining ingredients into mixing bowl, 15 seconds on speed 6.
Roll into large sausage shape with cling wrap.
Place in freezer to firm for 20-30 minutes.
Remove from freezer, take off cling wrap and roll in caster sugar.
Slice dough into round discs and place onto baking tray.
Bake in oven for 10-12 minutes.
Allow shortbread to cool before serving.
