Passionfruit Melting Moments

Ingredients

Filling

  • 60 grams Butter
  • 1 passionfruit
  • 120 grams icing sugar

Biscuit mixture

  • 250 grams Butter
  • 1 teaspoon vanilla essence
  • 60 grams icing sugar
  • 320 grams plain flour
  • 35 grams cornflour

Recipe's preparation

    Biscuits
  1. Pre heat oven to 160*C, line a baking tray with non-stick baking paper.

    Place butter, vanilla and icing sugar into TMX bowl and cream for 1 min/ speed 5.

    Add the flours and mix for 20 sec/ speed 3 to form a dough. Roll heaped teaspoons into balls and place on baking tray, approx 3 cm apart. Once all dough is used, witha floured fork flarren  the balls to approx 1 cm thick.

    Bake in oven for 15 minutes or until just slightly golden. Allow to cool on tray for 10 minutes and then transfer to a wire rack to completely cool.

    Wash and dry TMX bowl.

  3. Add butter, passionfruit pulp and icing sugar to TMX bowl and mix to combine for 1 minute/ reverse/ speed 6. 

    Pipe or spead filling mixture onto the flat side of the biscuit adn then place another biscuit on top like a sandwich. Continue until all biscuits are filled. Dust with icing sugar if you prefer and serve. Enjoy
