  • 60 g Desicattted coconut
  • 225 g white sugar
  • 1 --- egg
  • 1/2 teaspoon baking powder
  • 200 g plain flour
  • Jam, Any flavour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Biscuits
  1. preheat oven 160°C, line biscuit tray with thermomix oven Matt or baking paper.
  2. add sugar and coconut to mixing bowl MC on 10sec/speed9 put aside in a seperate bowl.
  3. add the butter to mixing bowl and soften 30sec/60°C/speed3,
  4. add sugar and coconut mix for 20sec/speed 4 scrape down sides of bowl repeat 20sec/speed 4
  5. add egg mix 10sec/speed 4
  6. add flour, and baking powder 20sec/ speed5
  7. roll mixture into balls approx 2 teaspoons or 25g each place onto baking tray evenly spaced. Lightly use your finger to put an indentation for the jam. Don’t flatten they spread on their own.
  8. Use a teaspoon to put a bit of jam into each indent
  9. bake for approx 10-12min until lightly golden.
    leave to cool on the tray for 10min while soft then transfer to wire rack to cool completely. Store in air tight container.

    When asked Hubby what biscuits would he like this week, his answer was same as last week, but can you add the coconut like you used to (referring to the old PMWU recipe)? This week will add the coconut with the flour. With thermo plum or strawberry jam they were and will be again extra yummy.

    I looked at this recipe and sugar content and cut it to 100grams as i was using strawberry jam - this is fast to make and tastes delishious - a repeat maker
