Peach & Coconut Muffins

Ingredients

Raw Sugar

  • 75 g raw sugar
  • 85 g plain flour
  • 95 g Self Raising Flour
  • 100 g vegetable oil
  • 1 egg
  • 140 g peaches, diced
  • 50 g Shredded coconut

Recipe's preparation

    Muffins
  1. Preheat oven to 180'C

    Add raw sugar to the TM bowl and mill 3 secs | speed 9

  2. Add the flours, vegetable oil, egg, peaches* and 30g of shredded coconut. Mix 5 secs | Counter-clockwise operation | speed 3

    *If using a 140g tub of diced peaches, add the liquid and reduce the oil to 85g

  3. Spoon into muffin patty pans or muffin papers and sprinkle with shredded coconut

  4. Bake at 180'C for 10-12 minutes or until lightly golden

    I made this into mini muffins and they were fantastic. I used canned peaches and added some extra juice as the mixture looked dry. I also used desicated coconut as I had no shredded and left the extra coconut on the top off. Turned out lovely, took about 15-20 mins to cook at 180.

    Very tasty.  I have a large/deep muffin tray (cooks 12), so i made the recipie 1.5x the ingredients, so i could fill the whole tray.  Worked perfectly.  Thanks for sharing

    Love this!

    I replaced the sugar with Rapadura, the peaches with tin apricots (all I had) and the veg oil with coconut oil. Made them in mini muffins for my little one and they are delish!
