Profiteroles with White Passionfruit Ganache

  • CHOUX PASTRY
  • 200 g water
  • 65 g Butter, in 1-2cm cubes
  • 150 g plain flour, I use Italian 00
  • 5 g sugar, castor or rapadura
  • 3 eggs, 700-900g
  • FILLING
  • 250 g Mascarpone
  • 70 g thick cream
  • 1 tsp vanilla essence, or paste
  • 20-40 g Maple syrup
  • GANACHE
  • 200 g white chocolate, I use Choceur or lindt
  • 70 g Pouring Cream, or any cream
  • 170 g passionfruit fresh or tinned

Recipe's preparation

    Choux Pastry
  1. Pre-heat oven to 200'C.
    Place the water and butter in the thermomix and Veroma for 3 mins on speed 1.
    Add flour and sugar blend on speed 2 for 1 min, add eggs one at a time as you blend.
    Then mix for 10 seconds on speed 5.
    Pipe or dollop golf ball sizes onto a tray and use wet fingers to neaten any points on top to prevent burning.
    Bake in 200'C for 10 minutes, then lower heat to 180'C and bake for another 5-10 mins. Should be golden brown and look well done. Check the inside is not doughy, but cooked through.
    When it is cooked, use skewer and pierce each profiterole quickly to maintain shape.
  2. FILLING:
    Place all ingredients into the thermomix and blend for 7 seconds on speed 5.
    When the pastry are cooled, cut pastries in half (an incomplete half, so your top stays attached) and add about 1 tbs of filling into each pastry.
  3. GANACHE:
    Place all ingredients in the thermomix and set to 50'C and mix for around 3 mins on speed 2. Refridgerate for around 10 minutes so the ganache is not too runny.
    Pour on the top of each pastry. Then refridgerate the pastries for 10 minutes or until you serve them.

Tip

Cut the pastries in half quickly when they leave the oven so they do no deflate.
Can refridgerate empty profiteroles for up to a week in an airtight container.
