Pumpkin Scones

  • 40 g butter or oil
  • 70 g sugar
  • 260 g Mashed Pumpkin, about 1 cup
  • 270-290 g Self Raising Flour, more or less depending on dough moisture.

Recipe's preparation

    Preheat oven to 200*.
  1. Cream butter and sugar 10 sec Speed 7.

  2. Add egg 5 sec Speed 5.

     

  3. Add pumpkin 5 sec Speed 5.

     

  4. Add flour. Knead 40 sec interval  speed.

  5. Roll out to 2 -3 cm thickness & use  floured spatula to cut into squares.  Glaze with milk if desired. Bake 10- 15 mins or til golden.

    I did put in the right amount of pumpkin but I didn't premash mine so maybe mine was too wet as the dough came out very wet, so I had to just dollop the mix onto the baking tray, which was easier than rolling and cutting dough anyway tmrc_emoticons.;) Had to bake for slightly longer due to the wetness, but they came out nice and moist which is great as nobody likes choking down a dry scone tmrc_emoticons.) Thank you, used up my leftover butternut to make these for the kids, they hate pumpkin but love these.

    Really pleased.

    Accidently added 310g of GF flour, but had 270g of pumpkin puree. Also added 1TBsp of White Chia Seed in 2TBsp water into the mix too. They rose and tasted yummy and still moist!!! I am very pleased!!!

    Very nice flavour, but found the mixture to be very wet and soft, even with the suggestion of extra flour. i couldn't cut out individual scones so I just plopped it on a tray and it baked as one giant scone. Lovely texture scone when baked. Thank you

    Didn't think these would turn out as the mixture was quite sticky (more like a cake mixture) and hard to cut into scones. However was pleasently surprised to find lovely light scones at the end of the 13 minutes cooking time.  Will definitely make these again, maybe need to purchase a new spatula that's not quite so rough on the edge tmrc_emoticons.) Thanks for posting.
