Dough

  • 200 g Milk
  • 60 g Butter
  • 150 g raspberries
  • 2 tsp dried yeast
  • 525 g bakers flour
  • 1 egg
  • 1 tsp salt
  • 5 g bread improver, If desired

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

    Dough
  1.  

    Place raspberries, milk, butter and yeast into the mixing bowl, insert MC into mixing bowl lid and warm 5min/37/speed 1

    Add baker’s flour, bread improver, salt and egg and knead 8mins/Dough mode or until the dough is smooth

     

  3.  

    Transfer dough onto a ThermoMat or floured work surface and shape into a ball.  Leave to prove in a warm place until doubled in size.

     

  4. Filling

    Place raspeberries, sugar and apples into mixing bowl, insert MC into mixing bowl lid.  Grate 4-6secs/speed 4.

     

  6. Assembly
  7. Gently transfer dough onto a ThermoMat or floured surface and lightly press out into a small rectangle (15x8cm), then roll out into a larger rectangle (approx.. 38x34cm).  Brush the edge of dough closest to you with water then spread the filling evenly over the dough.

     

  8. Starting at the edge furthest from you, carefully roll dough towards you, keeping it nice and tight.  Use the water-brushed edge to seal the rolls closed.

Tip

 

You can use frozen raspberries for this recipe – you may need more flour for this to prevent the dough from being too sticky.
