Raspberry and White Chocolate Cake

Ingredients

12 portion(s)

  • 60 g almonds
  • 110 g sugar
  • 170 g Butter
  • 220 g SR flour
  • 2 eggs
  • 70 g Milk
  • 1 tsp Vanilla Essence or Paste
  • 120 g white chocolate, roughly chopped into small chunks
  • 340 g fresh or frozen (not thawed)( raspberries
  • Icing Sugar to Dust
  • extra raspberries for decoration - optional

Recipe's preparation

  1. Preheat Oven 180C.

    Grind almonds 10 Seconds speed 9.

    Add sugar and butter. Mix 30 seconds speed 4/5. Scrape down.

    Add SR flour, eggs, milk and vanilla. Mix 30 seconds speed 4/5 until combined.

    Add white chocolate chunks and raspberries. Stir through by hand as batter is quite thick.

    Bake in prepared tin, 75 minutes.

We love this cake so much, I made it for our wedding cake! Ive since adapted the recipe to make it in the thermomix.
