  • 125 grams Salted butter, cubed
  • 400 gram sweetened condensed milk, can of
  • 60 grams golden syrup
  • 30 grams glucose syrup
  • 130 grams brown sugar
  • 200 grams white chocolate, chopped
  • 1 tsp salt flakes

Recipe's preparation

  1. 1. Grease and line a 20cm square cake tin with baking paper

    2. Place butter, condensed milk, golden syrup, glucose syrup and brown sugar in TM bowl - 5 min 50C SP1

    3. Increase temperature to 70C 5min SP1 (MC off)

    4. Increase temperature to Varoma, 13 mins SP 2 (MC off)

    5. Add in white chocolate 2 mins SP2 (MC on)

    6. Pour into prepared square pan and smooth the top.

    7. Sprinkle with the salt flakes

    8. Let the caramel cool for 60 mins on the bench. Cover and place in fridge overnight or until firm.

    not sure what you are doing wrong but I've never ever had an issue with this fudge setting. Are you following the recipe exactly? Leaving on bench prior to refrigerating? I only made it again twice last week and it was perfect as usual.

    Best recipe ever! Followed a few hints from the comments and it turned out perfect! I even opened a second can of sweetened condensed milk to make it up to 400g.. annoying yes, but totally worth it.

    I first made this over 1 year ago and it was perfect. Ready to make again and saw all the new comments here. I had kept a copy of the original recipe and the only variation from the current version is step 4, where it says varoma speed 3. I made it again yesterday and kept to the speed 3 with varoma and it is perfect again! I know thermomix have to abide by their safety rules, but I have had no problem with that speed on varoma, especially when the mc is off as there is no steam build up. For those of you who are worried and want to keep to speed 2, I would cook for a further 7mins. Hope you all try again with good results.

    I thought that I was the only one who this wasn't setting for.
    I just found a copy I had printed out last year and the only difference I could find in the recipe was in step 4 - my printed copy states to put it on speed 3 for 13 minutes (MC off) - not speed 2 that it now states in the recipe. Don't know if that will make a huge difference???

Just went to cut my fudge up for some gifts at a presentation and the fudge is as all the below comments! Sticky and taffy and I can't even roll it into balls because it's so sticky they are clumping all together and smudging all the gift bag. Looks disgusting! I so so so wish I could remember the original recipe.....

    I wish I had read the comments first before I made this. This used to be my go-to recipe for fudge and it never used to fail. This current recipe is now just a big slop in the tray. The rating needs to be changed as it's misleading. Fudge recipes need to be very precise and if the recipe is altered in any way without testing, this will have quite an adverse effect on the consistency as in this case.

    For those who have made this recipe before (as I have) and loved it - a warning. DO NOT WASTE your ingredients and time. Like the other comments below it did not turn out at all. My first fail another many many successful attempts. Disappointing. I will be searching for another recipe.

    This was always my 'go to' fudge recipe - friend and family loved it and i made it routinely for all my loved ones! This is the first time I've made it for a while and it didnt work at all! From previous comments I've seen that the recipe has been changed and it isnt working for anyone! If a recipe is changed it should be for the better but it looks like this one isnt consistently working. Very disappointed and felt like it was such a waste of ingredients tmrc_emoticons.(

    SusiZ: I just made this yesterday and also experienced the fudge not setting but remaining soft. Previously it was perfect everytime.
    I looked at an old copy of this receipe. The ingredients are also slightly different quantities.
    170 grams white chocolate (I have always used 200g) 1 can sweetened condensed milk (not skim) 160 grams brown sugar 120 grams Butter 75 grams golden syrup 50 grams glucose syrup

    Cooking time before was first put all remaining ingredients into the TM, cook for 8mins at 100C on speed 3. With the MC removed. Then Cook for a further 20mins at Varoma Temp on Speed 3. I am going to try the latter step with Speed 2.

    Hi All

    As per safety guidelines in the instruction manual, Varoma temperature is not to be used with speeds higher that speed 2 in your TM31. We asked the publisher to change their recipe to as per guidelines to a lower speed or longer cooking time or both and to republish once tested. Which they have done.

    We do not advise that you use any speed higher than speed 2 when cooking on Varoma Temperature in this recipe.

    I have tried this recipe twice now, first time following exact instructions, second time cooking for 25 minutes instead of the 13 as per another member's suggestion. Ugh, what a waste of ingredients and such a disappointment 😓 The first batch was so goopy and not even close to set even after two days in the fridge and the second still chewy, sticky and slightly goopy, more like a soft sticky caramel chew rather than a fudge. Letting this recipe go now ☹️ If anyone could suggest another tried and tested fudge that would be amazing!

    Comparing to an older printed copy of this recipe the only difference I can see is Step 4 WAS speed 3 (not 2).

    The last two batches I made were also sticky and did not set though tmrc_emoticons.(

    The same happened to me. My fudge was very soft, even after freezing. I increased the cooking time from 13 minutes to 25 minutes and it was perfect.

    I have made this successfully several times then mine was sticky and didn't set for two times in a row. I have worked out a 'fix' , working on the assumption that it was weather or humidity related, but while my fix works, I feel it is just a little less nice because of the small amount of extra chocolate. It takes a while, but it sets satisfactorily.
    Here goes.
    I reduced the glucose syrup to 25 grams.
    I increased the white chocolate to 225 grams (I used melts and that is the quantity in one pack.)
    In step 2, I increased the time to 5 minutes 30 seconds.
    In step 4, I increased the time to 13 minutes 30 seconds.
    After completing step 5, I then added this step . 1 minute reverse stirring, speed 1.
    Hope this helps someone else having an occasional sticky result.

    That happened to me the first time and I had to roll it into balls and put it in the freezer. It as becuase I used Agave syrup instead of glucose syrup. I also didn't have the right sized cake tin.
