Dough

  • 160 g Butter
  • 210 g caster sugar, (I use raw)
  • 130 g treacle
  • 1 egg
  • 1 pinches salt
  • 2 tsp baking powder
  • 20 g ground ginger
  • 1.5 tsp ground cloves
  • 1.5 tsp ground cinnamon
  • 400 g plain flour
  • 3 tbsp raw sugar, for rolling

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Ginger biscuits
  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. If using raw sugar, place sugar in the bowl and mill 3 sec/speed 10.
    Add butter and mix 10 sec/speed 6. Scrape down sides and mix 10 sec/speed 6.
  3. Add treacle, egg and salt. Mix 3 sec/speed 5. Scrape down sides and mix 3 sec/speed 5.
  4. Add baking powder, ginger, cinnamon and cloves and mix 5 sec/speed 5.
  5. Add flour and mix 10 sec/speed 5. Scrape down sides and mix 10 sec/speed 5 using spatula to help mix.
  6. Scoop into tablespoon sized balls and roll in your hands to make nice round balls. Roll in raw sugar and place on baking tray. Bake for 10-12 minutes at 180°C.

Tip

Dough can be rolled into balls, rolled in sugar and place in the freezer in freezer bags. Bake for 12-15 min directly from the freezer.
