Spiced Apple Crumble Cake

Ingredients

topping

  • 60 g brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon Nutmeg
  • 100 g flour
  • 50 g oats, rolled or quick oats
  • 60 g Softened butter cubed

Cake

  • 1 egg
  • 65 g raw sugar, can use coconut sugar
  • 60 g Softened butter cubed
  • 3 apples peeled and cored
  • 190 g skim milk
  • 100 g Quick Oats
  • 250 g SR flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon Nutmeg

Recipe's preparation

    Method
  1. For the topping.....

    Preheat oven to 180* and prepare muffin tin or 20cm cake tin. set aside

    Add all ingredients to the TM bowl and mix 1minute speed 4.

    set aside.

  2. For the Cake.....

    add apples to the TM bowl, chop 2 seconds speed 4. set aside.

    add sugar butter and egg to TM bowl and mix 30 seconds speed 4. scrape down. 

    add apples, milk and oats. Stir Gentle stir setting and Counter-clockwise operation for 2 minutes

     

  3. add all remaining ingredients and mix 1minute Counter-clockwise operation speed 2-3 or until combined

    pour into cake tin or divide between prepared muffin trays. finish off with the topping and bake, 

    cake for 30-35minutes

    cupcakes for 25-30 minutes

    allow to cool in the tin before turning out to finish cooling on a wire rack

    Made these this morning and they are so yummy. I kept some crumble to sprinkle on top which made the muffin lovely and crunchy. My four year old enjoyed her muffin tmrc_emoticons.)
