Sweet potato paleo brownies

Ingredients

6 portion(s)

Brownies

  • 100 grams dark chocolate
  • 500 gram Sweet Potatoes, Purple or red skin
  • 70 grams honey
  • 20 gram cacao powder
  • 1 heaped tablespoons Vanilla Essence/Extract
  • 1 tablespoon coconut oil
  • 1 tablespoon Coconut Flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs

Recipe's preparation

    Sweet potatoes
  1. Peel sweet potatoes, dice, place in Varoma,  Varoma, 24mins/speed3  till soft, place in thermomix bowl, purée, 30sec, speed 4, may née to scrape down sides.

  2. Brownies
  3. Melt dark chocolate,  break into small pieces into thermomix bowl, 50 degrees, 3mins, speed1. Add remaining ingredients.  Mix 1min speed4 till well combined. Pour into oiled 8x8 or 6x11 baking dish

    Bake 180degrees, 25mins. Test with a wooden skewer, if comes out clean. If not cook further 5mins.

    No it shouldnt be. not sure what has gone wrong for you, did you follow recipe exactly, was oven working ok, how high was it, maybe it was the tin size?

    I have made this recipe so many times as my children love it....also made for school fete which was a bit different for cake stall. Thx for recipe, definitely in favourites...actually I think I can do without with the amount of practice I have had!!!

    Very good. Very strong chocolate flavour, so I changed the portion size to serve 12, otherwise it would have been too rich. Next time, I'd only add 10grams of cocoa powder. Already given half of it away to friends as it was so tasty.
