Ingredients

  • 350 grams almond meal, Or blitz 350 grams almonds speed 8-9 for a few seconds
  • 50 grams Butter
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla extract
  • 2 organic free range eggs
  • 85 grams Pitted medjool dates
  • 1/2 Cup best quality dark chocolate chops, or organic dark chocolate chopped

Recipe's preparation

  1. 1.  Preheat oven to 180 degrees celcius (or 350 degrees Fahrenheit)


    2.  Place the almond meal, butter, bicarb, vanilla, eggs adn dates into the mixing bowl and blitz speed 7-10 for 40 seconds or until well combined.


    3.  Add teh chocolate and mix REVERSE speed 5 for about 15 seconds until well combined.


    4.  Using wet hadns, roll the mixtuer into approxmiately 1 tablespoon balls, then flatten with your palm.


    5.  Bake for about 10 minutes or unitl golden brown.  Allow to cool (if they last that long!) and enjoy

    These are awesome if you are looking for a gluten free alternative...Even the kids loved these...winner

    They did go soft, not crunchy like normal cookies, but still yummy. Would probably try cooking longer next time.

    firm fav in our house, we use nuttelex instead of butter and it turns out beautifully

    Did I miss an ingredient? My mix was so thick the Thermomix had trouble combining it.
