  • 80 g butter or reduced fat margarine
  • 30 g golden syrup
  • 1 teaspoon bicarbonate of soda
  • 1/2 MC of boiling water
  • 4 Weet-Bix, crushed
  • 55 g rolled oats
  • 90 g wholemeal plain flour
  • 100 g brown sugar
  • 75 g choc bits dark or milk
  • 75 g dried apricots, diced

Recipe's preparation

    Weetbix Cookies
  1. Pre-heat oven to 180°C.  Line biscuit tray with baking paper.

  2. Place butter and golden syrup in bowl for 2 ½ minutes at 90°C speed 2.

  3. Disolve bicarbonate of soda in the MC half filled with boiling water.

  4. During last 10 seconds add the bicarbonate of soda and water from the MC.

  5. Add remaining ingredients.

  6. Mix 20 seconds reverse speed 2.

  7. Place a heaped teaspoon size of mixture on tray and flatten slightly, leaving room for biscuits to spread.

  8. Cook for approx 15 minutes until a light golden brown if you prefer your biscuits chewy, or for crunchier biscuits leave them in the oven for 20 minutes.

Tip

I subsituted dried apricots for craisins, but you could also use other dried fruit.

    Very very oily biscuit.. Not a favourite with the family.. I think the butter needs to be decreased.. Or maybe more flour etc..
