Apple & Cinnamon Pancake Loveliness

Ingredients

Apple Mix

  • 3 granny smith apples, Cored and chopped into quarters
  • 2-3 strips of lemon zest, No white/Pith

Pancake Batter

  • 50 g Butter, Optional
  • 300 g Milk/Buttermilk
  • 2 eggs
  • 220 g plain flour, You could use wholemeal flour
  • 1 tbsp baking powder
  • 1/4 tsp salt, I milled my own Himalayan
  • 1/2 tsp cinnamon, doesn't have to be exact!
  • 1 tsp vanilla bean paste/extract, I made my own paste from the Sistermixin blog

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Apple Mix
  1. Place Apples and lemon Zest into mixing bowl and blitz on Turbo - 0.5 sec 1-3 times depending on the consistency you want.  I did it 3 times - but if you like a chunkier texture maybe once will suffice.Put this mixture aside in a bowl.

  2. The Pancakes
  3. Without cleaning the bowl add;

    the butter and melt for 2min/70 degs/Sp1

    Then add;

    the milk or buttermillk, 2 eggs, 30g raw sugar, 220g plain flour, 1 Tbsp baking powder, 1/4 tsp salt, 1/2 tsp cinnamon, 1 tsp of vanilla bean paste (Thermie made) or extract, and reserved apple mix.  

    Mix on Counter-clockwise operationSp 5 for 5-10 seconds - the longer you mix, the apples do tend to break down slightly smaller but they still taste amazing!

    Cook one serving spoon size dollop on a pan ( I spray with olive oil spray and add butter so it doesn't smoke/burn) and once you've greased once, no need to re-grease.Use the back of your serving spoon to gently spread the mixture from the middle out.

    Serve with maple syrup and/or butter or blueberries or any topping of your choice really...  and prepare to see them disappear very very quickly!  My 2.5 year old devoured 8 in a very short space of time!

Use a more flexible spatula to scrape out all the remnant batter - you won't want to be wasting any of this mixture!

    Lovely fluffy flavorful pancakes.   Makes a lot.  I only turboed my apples once for 1 sec. ...that was plenty or it would have been pulp.   Only comment is that they stay quite moist in the center doesn't matter how long you cook them.   Might help to place them on a tray in the oven to keep warm and dry out a little.   Definitely make again though.   Flavour was lovely.

  • I wizzed the lemon up on its

    I wizzed the lemon up on its own so i could get it quite fine and then added apple after. Once I made these, they were tasty but quite 'doughy'. I think the moistness of the apple makes it seem like they're not cooked through the middle perhaps. My 11mth old loved them tho!!

    My husband particularly likes anything with apple and cinnamon and these are yummy.  I might add a bit more cinnamon and with the apple only Blitz once as recommended as we quite like to have bits of apple to taste. I will definitely be making this over and over for my family and friends. Thanks for the recipe. ☺

    I tried these this morning and they were lovely and fluffy. I forgot to peel the apples first which didn't matter to me and also forgot to add the cinnamon. I think the recipe needs a bit more sugar though. Oh and sugar is missing from the ingredients list on the left. Next time I would turbo the lemon peel on its own first to get it smaller as there were still large chunks after 3 turbos with the apples. Great recipe though, my 2.5 yr olds also loved them as did I.
