  • 250 g Mixed dried fruit, (I used dates, figs, apricots & sultanas)
  • 90 g rolled oats
  • 20 g dessicated coconut
  • 35 g walnuts

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat the oven to 180°C. Grease and line the base of a 12 square muffin tin.

    Place brown rice and red rice into the mixing bowl. Mill 1 min/speed 9. Transfer into a bowl and set aside.

    Add mixed dried fruit, walnuts, almonds and chop 8 sec/speed 7, or until an evenly chopped consistency is achieved. Scrape down sides of mixing bowl with spatula.

    Add all remaining ingredients, including reserved rice mixture and 50g coconut oil, and combine 30 sec/Counter-clockwise operation/speed 3 with aid of spatula.

    Transfer mixture into prepared baking tin, then lightly smooth down to form an even surface. Bake for 15-20 minutes or until lightly browned on top. Remove from oven and allow to cool in tin for 20 minutes, then transfer onto a wire rack to cool completely.

Tip

I used less sugar but if you want this to be sweeter then use double the quantity of sugar.

This recipe is an adaptation of the Breakfast Bars in the Everyday cooking for families Thermomix book. I did not use the apple but you could if you wanted.
