Gluten-free American style pancake

  • 100 g brown rice
  • 100 g oatmeal
  • 50 g unsalted butter
  • 300 g Milk
  • 2 eggs
  • 30 g Coconut sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt

Recipe's preparation

  1. 1- Put in Thermomix bowl the oatmeal + rice and mill for 1 minute - speed 10, set aside.



    2- Without washing the bowl, put in butter and melt 2 minutes - 70ºC - speed 1



    3- Add milk, eggs, sugar, reserved oatmeal+rice, baking powder and salt and mix 10 seconds - speed 5. Let it rest for 1-2 minutes before proceeding to cook.



    4- To cook pancakes, heat 1/2 tsp butter in a frying pan over medium heat. For each pancake, pour in a small ladle of batter and cook for 1-2 minutes or until bubbles start bursting on pancakes surface. Turn pancake over and cook for a further 1 minute. Serve hot.

Tip

Top with fresh fruits, a greek yogurt's dollop and maple syrup.
