I LOVE Chestnut Pancakes! - Paleo, GAPS, Grain/Gluten Free

Ingredients

8 piece(s)

CCC Batter

  • 50 grams chestnut flour
  • 50 grams coconut dessicated
  • 50 grams cashew nuts
  • 1 banana, very ripe
  • 2 eggs
  • 1/4 teaspoon baking soda, or 1/2 baking powder if not GAPS
  • 20 grams water

Recipe's preparation

    Chestnut Pancakes
  1. Combine the chestnut flour, coconut and cashews in the mixing bowl and blend for 10 secs./speed 10.


  2. Add the rest of the ingredients and blend 6 secs./speed 6 
  3. Scrape into a jug for easy pouring into your pan.  
  4. Warm a large pan with ghee and or coconut oil for cooking, over low to medium heat.  
  5. Pour in your batter and cook until starting to set then flip. Don't over crowd the pan, it makes flipping harder.  
  6. Keep on a plate in the oven at 50°C as they cook, until they are all done.  
  7. Serve with your favourite toppings.  
  8. Amazing and light, very fluffy and moist. As my husband put it: "Hey we cannot have these, we are on the GAPS diet! No pancakes allowed, not like these anyway.".  
  9. If you have leftovers (HA!) they are lovely cold or even frozen and warmed or eaten cold another day. I advise making a double batch!

Tip

You could use any nut, but the cashews give it a really creamy texture. Desiccated coconut is better than coconut flour, as the latter is too dry. But, if its all you have then add extra water, probably about 30 grams more. As for the chestnut flour, it is amazing and I am always looking for more ways to use it!
