Recipe's preparation

    To the Bowl
  1. Add all ingredients, use the Tamper (pictured) if you have 1.
  2. Ensure you are in a well ventilated area then put your MC on, set for 30 Seconds - Speed 10. You can use a damp Dishcloth on the lid after the arms have closed, to stop the Chilli Dust escaping.
  3. Let cool completely & Place in a Jar & seal. This is enough Seasoning Mix for 2 makes of the recipe - which can be found in the picture.
  4. Asthma Warning
  5. Please do not make this on a day that you have someone who has Asthma in the house. If you have anyone that is Asthmatic visit please warn them before they come into the house. Sounds bad i know but 1 Asthma attack from this was just too many.

Tip

I cover the lid after the arms have closed & gently increase the speed to 10.
You don't want the ingredients to heat up too much for too long. If you want to grind for longer leave a 5 minute gap between 30 second grindings.

You can switch up your batches by adding -
*1 Smoked or Black Cardamom Pod OR
*4 Dried Muchrooms OR
*1 Tablespoon Szechuan Pepper (aka Sichuan/Szechwan/Chinese prickly ash/Mountain Pepper)
*1/2 Teaspoon Tumeric.

    TM 6
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
