Ingredients

Napoletana Sauce

  • 20 g olive oil
  • 1 brown onion, medium, quartered
  • 2 garlic cloves
  • 1 tomato paste, small tin
  • 2 cans tomatoes, 400g tins of diced
  • 1 teaspoons caster sugar
  • 1 packages oregano, fresh, 1 herb punnet, remove stems
  • 1 bunches fresh basil, leaves only
  • 1 teaspoon Vegetable stock paste
  • 105 g water

Recipe's preparation

    Sauce
  1. Add onion and garlic to mixing bowl and chop for 5 seconds on speed 5. Scrape down sides of bowl.
  2. Add olive oil and cook for 3 minutes 120 deg speed 1.
  3. Add tomato paste and cook for 1 min 120 deg speed 1.
  4. Add tomatoes, sugar, oregano and water and cook for 25 mins 100 deg speed 1 Counter-clockwise operation"Counter-clockwise operation" .
  5. Add basil and stock paste and mix for 10 seconds on speed 4.
  6. Use Blend"Blend" mode for 30 seconds on speed 8.
  7. Serve over cooked pasta.

Tip

Recipe converted and adapted from SFI May 2013.

This recipe would also be a nice sauce for a pizza base.

I served 1 portion stirred through Costco cauliflower gnocchi with some sauteed spinach and parmesan.
