For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Weigh sugar into the "Closed lid" and add vanilla bean that has been snipped into 1cm bits. Grind 1 min/speed 10.
- Scrape down the sides using your spatula.
- Add glucose syrup and water and pinch sea salt flakes.
Cook for 10 min/ 100°/speed 2. - Meanwhile sterilise jars and set aside. Once cooked pour vanilla paste into jars and seal. Store in fridge for up to 3 months.
