Zucchini Relish

Ingredients

1 litre(s)

relish

  • 2 cloves garlic, peeled
  • 1 brown onion, 1/4ed
  • 700 grams zucchini, chunks
  • 1 capsicum red, rough chop eg into 4
  • 120 grams Corn
  • 200 grams sugar, rapadura or brown
  • 4 teaspoon tumeric powder
  • 4 teaspoon mustard seed powder, or powder ground pre
  • 1 teaspoon all spice powder, or grind yourself pre
  • 1/4 teaspoon curry powder
  • 1 tablespoon Grapeseed oil or Vegetable Oil
  • 1 tablespoon salt, i use himilayan
  • 2 tablespoon cornflour
  • 1 tablespoon water

Recipe's preparation

    relish
  1. garlic and onion into TM bowl and chop 2 secs speed 7 set aside


    zucchini and capsicum into TM bowl chop 5 secs speedcounter-clockwise operation or long if you want it finer


    add all other ingredients  including onion and garlic ,except cornflour and water and cook 30 mins varoma speed 1 counter-clockwise operation


    mix cornflour with water, add to relish , cook 5 mins 100deg speed 2 counter-clockwise operation


    transfer to sterilized bottles and seal, let settle for a week before tasting... yum! 


    good on grilled meat or wiht cheese and biscuits

Tip

put steamin [[wysiwyg_imageupload:349:]]basket on top when cooking so it does not spit.. leave MC off

    We love this relish! I have added carrot also when short on other ingredients!We enjoy this relish with eggs for breakfast, on quinoa salad for lunch and instead of tomato sauce with dinner tmrc_emoticons.)

    I did not particularly like this, but am going to try it again with vinegar added. I have made a similar recipe in the past that I love, but it does have vinegar.

    How long does this relish keep. I thought it unusual not to use vinegar, as this is the ingredient that helps preserve the relish. Would like to try this.

    Love this recipe!

    I have made this one several times and it's always a big hit. Mix half and half with cream cheese for a simple but delicious dip. A perfect companion for cheese and crackers.
