If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Weigh sugar into "Closed lid" . Mill 10 seconds / speed 10. Set aside.
Without cleaning bowl, add brine, xantham gum and tartar. Mix 4 minutes / speed 4.
Add reserved sugar and vanilla bean paste. Mix 5 minutes / speed 4.
Transfer to container and keep refridgerated until use.

Tip
I made this to use with a deconstructed Wagon Wheel dessert.
I used crushed Arrowroot biscuits, Tenina's Raspberry and Vanilla Jam and Chocolate sauce from the Basic CookBook.
You could substitute a vanilla bean instead of paste - just add it to the sugar in the first step and increase time to 20 seconds.
Stevia can also be used instead of sugar (1/3 cup) or sweetener of choice.

so easy and i think it will be my saviour for when...
so easy and i think it will be my saviour for when i need a sweet treat while dieting. i used xylitol as a sweetener to make it low GI, also i might have squeezed my vanilla bean paste pouch a bit too hard...whoopsie. mix diced berries into a couple of spoonfuls...next level.
