Ingredients
Condensed Milk
- 125 g water
- 225 g sugar
- 110 g full cream milk powder
- 1 pinches salt
Fudge
- 1 portions condensed milk, The recipe for condensed milk above = 1 portion. 1 x 390g tin if you use store bought.
- 125 g Butter
- 40 g golden syrup
- 220 g brown sugar
- 200 g white chocolate melts

- 1. Measure all condensed milk ingredients into bowl and cook
"Slow Cooking" 6 minutes,
"Sous-vide" 100 degrees,
"Blend" speed 4
2. Leave condensed milk in bowl and continue onto fudge steps - 1. Add all Fudge ingredients except for white chocolate into bowl
2. Cook for
"Slow Cooking" 8 minutes,
"Sous-vide" 100 degrees,
"Blend" speed 3
3. Take off measuring cap, cook for
"Slow Cooking" 20 minutes,
"Sous-vide" 120 degrees,
"Blend" speed 3
4. Line a slice tin with baking paper (approx 28x18cm)
5. Add white chocolate and mix
"Slow Cooking" 30 seconds,
"Blend" speed 4
6. Pour fudge mixture into slice tin
7. Sprinkle sea salt over the top of fudge
8. Set on bench or in fridge overnight

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
