Caramel Bavarian Cream (adapted from Australian Women's Weekly Cookbook)

Ingredients

  • 1.5 level tablespoons gelatine
  • 1/4 cup Boiling water
  • 170 g sugar
  • 60 g extra water
  • 270 g Milk
  • 2 Eggs, separated
  • 80 g extra milk
  • 1 teaspoon vanilla
  • 300 g cream

Recipe's preparation

  1. Dissolve gelatine in boiling water.

  2. Place sugar and cold water into TMX bowl. Cook on Varoma temp for 6 minutes, speed 2 to dissolve the sugar.

  3. Then cook on Varoma temp for 12 minutes, speed 1 to 'caramelise'.

  4. Add milk and cook on Varoma temp for 2 minutes,  speed 2. Watch the mixture carefully as it may boil over towards the end of the time.

  5. Set speed to 4 and add the extra milk. Keep the blades running and add egg yolks one at a time and then the vanilla and the gelatine. Mix for a further 30 seconds on speed 4.

  6. Put mixture into a separate bowl and refrigerate until it starts to set.

  7. Clean TMX bowl thoroughly. Add Butterfly and whip cream. Add milk mix and whip through on speed 4 for approximately 10-15 seconds.

  8. Either, you can put caramel mix into a separate bowl and clean the TMX bowl again. Whip egg whites until they form soft peaks. Fold carefully into caramel mix.

    OR

    Whip egg whites using beaters, then add them to the TMX bowl with the caramel mix. Whip through with the butterfly in the bowl for approximately 10-15 seconds.

  9. Place into serving bowl and refrigerate until set.

    Serve with cream or icecream.

Tip

Egg Whites: I used a set of beaters because I've never had any luck with my thermomix and beating egg whites. But I'm pretty sure you're more clever than I am with that! tmrc_emoticons.;)

Serving: According to the original recipe, you can place the mix into a lightly oiled bowl and then turn it out to serve it.

    This has always been a Christmas tradition for our family. I was so pleased to find this has been adapted to make in a Thermomix. I made two last Christmas and they were fantastic. Making it again this Christmas. We use a tupperware ring jelly mold for ours. Thank you!
