Christmas Pudding Icecream

Ingredients

6 portion(s)

  • 3 egg yolks
  • 500 g whipping cream
  • 500 g Milk
  • 220 g icing sugar, (Made in TM)
  • 2 teaspoons Vanilla Bean Paste
  • 80 g brandy
  • 150 g mixed dried fruit
  • 100 g glace cherries
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon cinnamon

Recipe's preparation

  1. Place egg yolks, cream, milk, sugar and vanilla paste into Closed lid and cook for 5 minutes, at 80o on Speed 4.  Transfer delicious creamy icecream mixture to Thermoserver.

  2. Place dried fruit, cherries, brandy, mixed spice and cinnamon into Closed lid and set dial to closed lid position. Pulse with Turbo button for 2 seconds so that you have a rough but evenly chopped mixture.

     

  3. Add ingredients from Closed lid to Thermoserver and stir in to vanilla icecream.

  4. Place in freezer and leave until firm.

  • I froze in thermoservo. It took 2 days to 'freeze'...

    I froze in thermoservo. It took 2 days to 'freeze' though it was crystalized and not creamy. I followed the reciped exactly as directed.

    Even freezing again in another container didn't help.

    I stirred a couple of times to distribute the fruit, as it was freezing. It never froze properly.

    It tasted nice but as it was not creamy, (crystals plus pools of runny milk) I won't be using this recipe again. I was surprised to see the amount of milk in it, as icecream is usually made with cream.

    I just made this but am worried all the fruit will settle during freezing. Do we remove and stir every few hours?? Anyone know?

    I am making this for Christmas day after an extremely successful trial run. I froze portion sizes in silicon patty pans. When served upside down, the fruit is then at the top and it looks marvelous. A mint leaf and dash of raspberry coulis made it look as good as it tasted! Made some with rum instead of brandy.
