Tip

Raspberries: the packets are usually 200g so I took that to mean that I was then allowed to eat the other 10gram while making the Rocky Road!

Raspberries can be substituted with other red jelly lollies e.g. snakes / red frogs.

Please note that the coconut oil is not essential. It just makes the chocolate a little smoother and therefore easier to work with.

I love the flavours of this rocky road, but have had several disasters with my chocolate melting and today was no different, I ended up with a clumped mess.... I held back on the coconut oil on the second attempt, adding it after the choc was melted and it worked fine.... The oil must be the culprit, just wondering what brand everyone else has used?

  • Fantastic Rocky

    Submitted by Lillo on 27. December 2015 - 11:07.

Fantastic Rocky Road....unfortunately this year when I made it, was unable to find Clinkers anywhere. I traipsed from shop to shop, supermarket to supermarket, and all sold out. I reckon they are all making Leonie's "Clinker Rocky Road"!!! Ended up OK though as I substituted chocolate coated Honeycomb instead. Now I will have to call it "Honeycomb Rocky Road" Thanks, Thermofun for another great recipe.

    Submitted by Bek22 on 21. December 2014 - 23:58.

Lovely recipe! I used Cadbury dairy milk blocks of chocolate and only needed to melt for the first 5 min, then 1 min on reverse to stir in all the goodies! No Clinkers at my local shop so I used a Violet Crumble bar instead, but will definitely make this again with Clinkers.

But yummy all the same. I think I will swap out the clinkers for pistchios or something.
