Ingredients

Hot Cross Sulatana & Walnut Muffins

  • 125 g unsalted butter, cubed, at room temp
  • 125 g brown sugar
  • 1/2 Orange or lemon rind or can use 20g mixed peel
  • 2 eggs
  • 125 g self-raising flour
  • 2 tsp cinnamon powder
  • 40 g rolled oats
  • 100 g sultanas or dried mixed fruit
  • 100 g chopped walnuts or seeds for nut free
  • 225 g Greek-style natural yoghurt

crosses

  • 2 - 3 tbsp self-raising flour
  • 2 tbsp water
  • 1 tsp sugar

Recipe's preparation

  1. 1. Preheat oven to 180c fan forced. Prepare 12 hole muffin tray lined with paper cups or can use silicone muffin tray as no need to grease or line.
  2. 2. Add orange peel (or lemon peel or mixed peel) into the mixing bowl and Chop 7 sec/speed 8. Scrape around the mixing bowl.
  3. 3. Add butter & sugar into the mixing bowl and Mix 20 sec/speed 4.
  4. 4. Add eggs & yogurt into the mixing bowl and Mix 5 sec/speed 5. Scrape around the mixing bowl.
  5. 5. Add flour & cinnamon powder into the mixing bowl and Mix 5 sec/speed 5. Scrape around the mixing bowl.
  6. 6. Add rolled oats, sultanas (or dried mixed fruit) & chopped walnuts (or seeds) into the mixing bowl and fold in to combine using a spatula.
  7. 7. In a small size bowl add flour, water & sugar for the crosses, and mix into a smooth paste. Put the paste into a plastic bag and. set aside. When ready to use cut a small hole in one corner of the bag for piping.
  8. 8. Pour the batter into prepared muffin tray, divide evenly, smooth the top then pipe the crosses over each muffin.
  9. 9. Bake in pre-heated oven for 25 min. Take out and rest for 10 min before removing the muffins from the tray and placing onto a serving plate.
