Easy Peezy Lemon Squeezy No Bake Cheesecake!

Ingredients

10 portion(s)

Base

  • 1 package Arnotts Nice Biscuits, 250g
  • 80 grams melted butter

Filling

  • 80 grams freshly squeezed lemon juice
  • 400 grams sweetened condensed milk
  • 500 grams Phillidelphia Cream Cheese

Topping

  • 1 Cadbury Flake Chocolate, or any other topping of choice

Recipe's preparation

    Base
  1. Add the whole packet of nice biscuits to the mixing bowl.

    Place lid on with MC.

    Crush biscuits 20 Seconds/ Speed 5.
  2. Scrape down the sides of the bowl with the spatula.

    Add in the 80g of Melted Butter,

    Place lid on with MC,

    Combine for 20 Seconds/ Counter-clockwise operation/ Speed 4.
  3. Scrape down sides of the bowl with the spatula, pinch some of the biscuit base together if it sticks together slightly transfer into a baking dish. It should not be wet! Just enough for the mixture to grip, If it's still to dry add 20g more melted butter and re-test.

    Spread the mixture evenly across the bottom and up the sides of the dish and press down to compact the base.
  4. Place the dish in the fridge to chill.

    Clean and dry the mixing bowl.
  5. Filling
  6. Place the 500g Philidelphia Cream Cheese into the mixing bowl,

    Place the lid and MC on.

    Beat the Cream Cheese 30 Seconds/ Counter-clockwise operation/ Speed 5.
  7. Scrape down the sides of the mixing bowl.

    Add the 400g of Condensed Milk.

    Place the lid and MC on.

    Combine for 30 Seconds/ Counter-clockwise operation/ Speed 4.5.
  8. Scrape down the sides and repeat if nessasary.
  9. Add 80g Lemon juice to the mixing bowl,

    Place the lid and mc on,

    Combine 30 Seconds/ Counter-clockwise operation/ Speed 5.
  10. Pour filling into Chilled base and spread evenly.

    Top with crumbled chocolate or other desired topping

    Refrigerate for 3 hours.

    OMG! This is delish.
    I added a teaspoon of dissolved gelatine to ensure it set firm, after reading some comments on this thread, I also like a firm cheesecake. I also made the base crumbs first and then set them aside in another bowl. I then chopped the butter into cubes and added it to the TM bowl, 2-3 mins, 50 C, Speed 2 to melt the butter. I then tipped the biscuit crumbs back into the TM bowl with the melted butter and continued with the recipe.
    Spoil yourself and try this one 🤗

    Absolutely LOVED this recipe... Have now made it three times.
    The only additoni was to add a teaspoon of disolved getaline (I like a hard cheese cake).
    First one I made as is (with the gelatine)
    The next one I made I threw in half a punnet of Strawberrys in the final sections and BINGO, Strawberry cheese cake.
    Todays I'm adding Chocolate coated strawberries... Will let you know how THAT turns out.Love

    This has got to be one of my favourite tmx desserts! I use 110g butter for the base. I have topped it with passionfruit pulp, strawberry coulis & blueberry coulis. BCB blueberrh coulis was the best! I once ran out of Nice biscuits so I used some scotch finger and it was still fine. Thank you for a great recipe.

    Sadly I was not a fan of this cake and neither were the people I served it to! I used fresh lemon juice but it still wasn't set after 7.5 hours. I mixed the cream cheese and condensed milk for 20 seconds extra, but it still had small lumps. Just tasted like I was eating cream cheese. I must have done something wrong as most of the reviews say it's amazing!

    Made a few substitutes just due to what I had at the time. Used butternut snaps for the biscuits, only had 400g of cream cheese, used half fresh squeezed and half bottled lemon juice....
    It set no problem at all and was soooooo yummy. I won’t make it again as I nearly ate the whole thing in 3 days all by myself 😬

    Was doing these for a dinner party in a 12 section dessert tin, for a bit more of a wow factor, if anyone decides to do this I would suggest doubling the cheese mixture to fill them.
