Easy Peezy Lemon Squeezy No Bake Cheesecake!

Ingredients

Base

  • 1 package Arnotts Nice Biscuits
  • 80 grams melted butter

Filling

  • 80 grams lemons, juiced
  • 400 grams sweetened condensed milk
  • 500 grams Phillidelphia Cream Cheese

Topping

  • 1 Cadbury Flake Chocolate, or any other topping of choice

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Base
  1. Add the whole packet of nice biscuits to the mixing bowl.

    Place lid on with MC.

    Crush biscuits 20 Seconds/ Speed 5.

  2. Scrape down the sides of the bowl with the spatula.

    Add in the 80g of Melted Butter,

    Place lid on with MC,

    Combine for 20 Seconds/ Counter-clockwise operation/ Speed 4.

  3. Scrape down sides of the bowl with the spatula and transfer into a baking dish.

    Spread the mixture evenly across the bottom and up the sides of the dish and press down to compact the base.
  4. Place the dish in the fridge to chill.

    Clean and dry the mixing bowl.
  5. Filling
  6. Place the 500g Philidelphia Cream Cheese into the mixing bowl,

    Place the lid and MC on.

    Beat the Cream Cheese 30 Seconds/ Counter-clockwise operation/ Speed 5.
  7. Scrape down the sides of the mixing bowl.

    Add the 400g of Condensed Milk.

    Place the lid and MC on.

    Combine for 30 Seconds/ Counter-clockwise operation/ Speed 4.5.
  8. Scrape down the sides and repeat if nessasary.
  9. Add 80g Lemon juice to the mixing bowl,

    Place the lid and mc on,

    Combine 30 Seconds/ Counter-clockwise operation/ Speed 5.
  10. Pour filling into Chilled base and spread evenly.

    Top with crumbled chocolate or other desired topping

    Refrigerate for 3 hours.

    Was doing these for a dinner party in a 12 section dessert tin, for a bit more of a wow factor, if anyone decides to do this I would suggest doubling the cheese mixture to fill them.

    I just finished making this but used bottled lemon juice, so does that mean it wont set? Expensive stuff up is thats the case. You need to put in the ingredients not bottled lemon juice.

    I didnt read the comments and made this with bottled lemon juice. Perhaps you could adjust the recipe to say a lemon so others dont muck it up. So it probably wont set according to others?

    If you use the bottled lemon juice and not the real lemon it won't set

    i made little cheesecake bites...... put the base in bottom of little muffin tins then cream cheese mixture on top and topped with pieces of strawberries. A big hit in this house!

    I made this for Father's Day lunch, set perfectly! I am not a fan of gelatine in cheesecakes so was extremely happy this worked for me. Am yet to taste- but I'm sure from licking the spoon it's amazing. I used chocolate digestive biscuits as that's all I had in the cupboard, and added 2 tsps vanilla essence.
