Feijoa, Apple, Orange & Ginger Sponge Pudding

Ingredients

Feijoa Apple Filling

  • 3 apples, Sliced 3cm pieces
  • 150 g feijoas, Halved and flesh removed
  • 30 g Crystalized ginger
  • 1/2 orange rind, removed with vegetable peeler

Sponge Topping

  • 125 g Butter, cubed
  • 125 g raw sugar
  • 2 tablespoons Milk
  • 125 g flour
  • 2 tsp baking powder

Garnish

  • 2 tablespoons icing sugar

Recipe's preparation

    Preheat oven 190 degrees C
  1. Place apple into TM basket. Place 500g water into TM bowl, insert TM basket cook 10 min/Varoma/speed 2.  


    Scoop out feijoa flesh.  With 3 minutes to go add feijoa to apple in TM basket and let cook for last 3 minutes.


    Using spatula remove TM basket and place feijoa and apple into an oven proof dish.


    Tip water from TM bowl, rinse and dry.  


     

  2. Add orange peel, blitz 10-20 sec/speed 6-7.  Add crystallized ginger and blitz 5 sec/speed 6.  Scrape into Feijoa/Apple mixture and gently mix in.


    Place in preheated 190 degree oven to keep hot. (VERY IMPORTANT).


    Wash and dry TM bowl.

  3. Place sugar into TM bowl - mill 10 sec/speed 9.  Insert butterfly. Add butter and mix 10 sec/speed 4.  Scrape down sides of bowl. Mix for another 1 min/speed 4 or until light and creamy.


     

  4. With butterfly rotating speed 4/10 sec add egg and milk.  


     

  5. Remove butterfly.  Add baking powder and flour, combine 5 sec/speed 4.


     


     


     

  6. Take hot fruit mixture from oven and place big dollops of sponge mixture over the top of fruit. Spread evenly.


    Bake 45 mins. 


    Sprinkle with icing sugar and serve hot with vanilla ice cream.

Tip

It is very important to have very hot fruit when you put the sponge topping on the fruit as it helps it rise and cook quickly.

If you like more fruit, then double the amount of apple and feijoa.  Sooooo yummy.

    I used the sponge part of this recipe for an apple spong I made.  I added an egg, missing from the ingredients list, and used GF flour for my coeliac husband.  Worked really well.

    This looks so good. Sponge top puddings are aneasy and economical dessert for winter, so its good to see how to make the sponge topping using a thermomix.
