Ingredients

  • Base
  • 500 g plain sweet biscuits
  • 250 g Butter
  • Filling
  • 750 gpackaged cream cheese
  • 11/2 cups castor sugar
  • 2 tablespoons plain flour
  • Pinch salt
  • 4 eggs, separated
  • 2 eggs
  • 2 cups sour cream
  • 2 tablespoons lemon juice

Recipe's preparation

  1. Base

    Place 1 packet biscuits in TM

    Mill for 5 Secs on speed 7

    Place in bowl

    Place 2nd packet biscuits in TM and mill for 5 secs on speed 7

    Place with previous biscuits

    Place butter in TM and melt for 2 minutes on 60 degrees on speed 4 

    Once butter has melted place biscuit mixture into TM bowl and mix for 10 – 20 seconds on speed 4.

    Press crumb mixture on base and sides of 24cm springform pan

    Refrigerate while preparing filling

     

    Filling

    Place cream cheese in TM

    Mix for 1 - 2 minutes on speed 4  until smooth and soft

    Insert Butterfly

    Add sugar, flour and salt and mix for 15 seconds on speed 4

    Scrape down sides

    Add whole eggs, egg yolks, sour cream and lemon juice

    Mix for 20 - 30 seconds on speed 4 

    Place mixture into a bowl

    Clean TM bowl

    Insert Butterfly

    Place egg whites in bowl

    Beat egg whites for 2 - 3 minutes at 50 degrees on speed 4  

    Using a whisk gently fold egg whites into filling mixture

    Pour mixture into prepared base

    Bake in moderately slow oven 11/4 - 11/2 hours

    Allow to cool in oven

    Refigerate until firm

     

    If desired top with whipped cream and sprinkle with flake

    Whipping cream - 600g full cream into TM bowl, insert butterfly and beat on speed 4 until desired consistency is achieved - 20 seconds - 1 minute, watch closely to avoid making butter

Tip

Nice biscuits are used for the base

Make sure eggs are at room temperature

Egg whites should be light and fluffy

This dessert is best made the day before and topped with cream and flake prior to serving
