      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Weigh Hazelnuts into mixing bowl then chop 2-3 seconds on reverse speed 7.
    Loosen nuts around blades with spatula.
  2. Roast nuts - 15 minutes, Varoma, Reverse, Speed 1, NO MC. Set hazelnuts aside in a bowl.
  3. Weigh chocolate into mixing bowl. 10 sec, sp 8. Scrape bowl with spatula. (Bowl will be warm and it will take a bit to get up to speed 10 - all good!)
  4. Melt chocolate - 1 minute, 50 deg, speed 3. Scrape down sides of bowl with spatula.
  5. Add puffed amaranth and reserved roasted nuts and mix 10 sec, reverse, speed 2.5-3.
  6. divide mixture into chocolate moulds or Thermomix silicone snack mold and freeze or refrigerate (depending on how fast you want to eat them!) until set.

Tip

If you don't have puffed amaranth you could omit it. I wouldn't recommend substituting with rice bubbles as they are much larger and will change the texture of the chocolates.
