Macadamia, cherry & Coconut truffles

  • 100 grams macadamias
  • 95 grams dessicated coconut, (1 cup)
  • 400 grams dark cooking choc or choc drops, broken into pieces
  • 1/2 can coconut cream, (270 ml can)
  • 2 tablespoons kahlua
  • 100 grams glace cherries
  • cocoa powder, to roll balls in

Recipe's preparation

    Method
  1. 1. Line a baking tray with baking paper and spread nuts over. Toast for 5-6 minutes at 180 degrees.

    2. Meanwhile, finely chop cherries in TM bowl 1-2 secs, Speed 5. Set aside and rinse and dry bowl. 

    3. Remove nuts from oven and place in TM bowl. Spread coconut on baking tray and toast for 2-3 mins. While toasting, process toasted nuts in TM bowl 5 secs, Speed 6. Set aside with cherries. 

    4. Add toasted coconut to bowl with nuts and cherries.

    5. Process choc drops or squares of choc in TM bowl, 8 secs, Speed 6. Add coconut cream. Cook for 5 mins, speed 3, temp 50 or until melted.

    6. Add nuts, cherries, coconut, and Kahlua (or Tia Maria) and mix for 20 secs, speed 2. Scrape down sides and mix for a further 5 secs.

     7. Refrigerate for aout 2 hours. Working quickly, roll into small balls and then roll in cocoa. Makes abour 50 - 60.

    We used cherry liquor instead of kahlua and doubled the quantity for the TM5.  Turned out really good.  Thznk you for sharing
