      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add eggs, sugar, salt and water to the bowl. Insert measuring cup. 8 sec / - / speed 5

    2. Scrape down the sides with a spatula if necessary. Add flour. Insert measuring cup. 30 sec / - / speed 3

    3. Scrape down the sides with a spatula if necessary. Add milk. Insert measuring cup. 1 min / - / speed 4

    4. Let stand for 30 minutes to allow mixture to thicken slightly, and also to let the bubbles to disappear.

    5. Gentle stir to mix any settled mixture. 30 sec / - / speed 1. You may need to do this a couple of times during cooking time.

    6. Butter the pan over low to medium heat. Pour an amount of mixture into the pan so that it only just covers the base. If mixture sizzles loudly and bubbles, this is a sign that the pan is way too hot. Adjust accordingly. Turn pancake when edges begin to crispen and curl, though if the pancake sticks, it will not curl. Cooked side should be golden in colour. Remove when second side is cooked.

Tip

Slow and steady wins the race! Do not rush the standing or cooking time.

I usually have 3 small to medium pans going at the same time, which dramatically reduces cooking time.

Though margarine can be used instead of butter, I find butter reduces the instance of the pancakes sticking.

Kids love these as a cold snack in lunch boxes and on long car rides. Weekend breakfast treats as well.

Often served with: 1. Icing sugar and fresh lemon juice; 2. Maple syrup (or other favourite syrup); 3. Strawberry jam (or any fruit jam of choice);
