  • Rind of 1 Lemon
  • 220 g caster sugar
  • 600mls thickened cream
  • 80 g freshly squeezed lemon juice, Strained
  • 3 drops lemon oil, Optional
  • 60 g glucose syrup, Optional but helps reduce ice crystals

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    How to:
  1. 1. Blitz the lemon rind and sugar 15secs/sp9. Scrape.

    2. Insert the butterfly whisk.

    3. Add the cream, optional oil and optional glucose syrup and whisk 40secs/sp 3.5, or until thick and creamy.

    4. Add the juice and blend briefly for 10secs/sp 3.

    5. Spoon into a shallow container. Cover with 2 layers of clingwrap.

    6. Freeze for 4 hours or overnight. Until firm.

    7. Bring to room temperature for 15 minutes or so before serving.

Oh my gosh... so delicious!
As there are no added preservatives, this is best consumed within 5 days, to ensure freshness and flavour.
In my house... no problem!

If you have an icecream churner, follow the manufacturer's instructions after mixing is complete, step 4.
